Plant Power Muesli

Plant power muesli - 12 plants in every serving

When it comes to gut health, plant diversity is the name of the game. Finding new ways to get the recommended 30 different plants per week into our diet might feel like a bit of a challenge but it’s one worth pursuing, because as the evidence shows, a healthy gut microbiome is central to almost every aspect our wellbeing.

With 12 different plant sources per serving, this homemade muesli is a brilliant way to boost the number of plants in your diet. It’s significantly healthier and more balanced than supermarket options which are usually made up of 70% oats, and it’s easy to change the ingredients each time you make it to keep diversifying the range of plants you consume.

I enjoy this served with yogurt and a couple of different fresh fruits, which means there’s actually 14 plant points per bowl – not bad! It’s nutrient rich, wholefood-based plant goodness at its simplest and best – no sugars, no nasties, no nonsense. Once you start making your own (and while you’re at it why not double batch it and give some as a gift?), you’ll never buy shop-bought again.

Plant power muesli served with yogurt, blueberries and pomegranate - 14 plant points per serving!

Here’s what you need to make enough to fill a 1 litre Kilner style jar.

Ingredients:

1 ½ cups organic oats

1 ½ cups wheat flakes

½ cup toasted coconut flakes

¼ cup mixed seeds (I use Lidl’s which include pumpkin, sunflower, linseed and hemp)

¼ cup golden flaxseeds

¼ cup chia seeds

¼ cup cashews chopped

¼ cup almonds chopped

½ cup dried date pieces

Just mix all the ingredients together and store in an airtight jar / container. Enjoy!
